Strawberry Arugula Quinoa Salad with Balsamic Vinaigrette

It’s the month of June. Which means that it’s strawberry season! I’m having fun thinking of different ways to use this sweet, juicy, incredibly delicious fruit, which happens to be right up there with all my favorites=). I could seriously bask in the hot, summer sun and devour strawberries endlessly…they’re so darn good!


I eat a lot of salads for lunch and I LOVE adding berries to salad. So today I’m sharing a scrumptious summer salad with lots of yummy ingredients that compliment strawberries.

This salad has:






Feta cheese

And for the dressing I used a balsamic vinaigrette.


The strawberries are oh so sweet and pair well with the spicy arugula and tangy feta. And the roasted almonds add earthiness. Then the balsamic vinegar brings all the flavors to life and makes them sing!

If you’re stuck in a lunch rut or just feel like changing things up, I suggest giving this a try! It’s light, refreshing, colorful and wonderfully delicious!


Strawberry Arugula Quinoa Salad with Balsamic Vinaigrette 

2 cup spinach, packed

1/2 cup arugula, loosely packed

2 cups halved strawberries

1/2 cup cooked quinoa

1/2 cup feta cheese

2 handfuls of roasted almonds

1/4 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

Freshly ground salt & pepper


  1. Combine the first 6 ingredients and divide into two bowls.
  2. Whisk together the olive oil, vinegar, and salt and pepper until fully emulsified.
  3. Pour the vinaigrette over the salad and serve.
